Stellum Bourbon is a blend of straight bourbon whiskies distilled and aged in Tennessee, Kentucky, and Indiana. It begins with three separate Indiana mash bills, two of which are high rye in composition, and one that is almost exclusively corn. To this dynamic mixture, older barrels from both Kentucky and Tennessee are meticulously adding, creating depth and complexity that quickly establish the Stellum style. Aromas of lemon, fresh herbs, and macadamia nut lead to a round, oxidative palate with hints of blackberry and cayenne pepper, finishing with clove and smoked honey. The ABV of 57.49 lands surprisingly lightly on the tongue.
